While in Colorado over the holiday break, we ate a local barbeque place that offered among their many yummy menu items, a Jalapeno Mac & Cheese. It was deemed a culinary wonder by our entire extended family and we even picked up a second batch for a get together later that week. I vowed to find a recipe for Jalapeno Mac and Cheese when I returned home. This morning I found one! It was among a couple recipes being offered exclusively to the Kraft Delicious Byte Bloggers - from celebrity chefs The Neelys! Since September, Kraft Foods has teamed up with celebrity chefs Gina and Pat Neely, sportscaster Erin Andrews, and football legend Joe Montana to help fight hunger in America through the Huddle to Fight Hunger program. What You Need
1 pkg. (12.6 oz.) KRAFT HOMESTYLE Macaroni & Cheese Dinner Classic Cheddar Cheese Sauce
1 Tbsp. chopped pickled jalapeño nacho slices
1 Tbsp. chopped canned chipotle peppers in adobo sauce
1 Tbsp. chopped green onions
Make It
Heat oven to 425ºF.
Prepare Dinner as directed on package except do not top with Bread Crumb Topping. Stir in jalapenos and chipotle peppers; cook 1 min. or until heated through.
Spoon into 1-1/2-qt. casserole; top with onions and crumb topping.
Bake 8 to 10 min. or until golden brown.
For Spicier Dish:
Increase the jalapeño slices to 2 to 3 Tbsp. Or for a zestier (but not hotter) dish, increase the chipotle peppers instead.
Special Extra:
Sprinkle with 2 slices cooked and crumbled OSCAR MAYER Bacon.
