Velveeta Shepherd’s Pie Skillet

As a Kraft Delicious Byte Blogger, I was offered the opportunity to share an exclusive first look at this recipe from VELVEETA and Bob Evans®.  The recipe is close to one I've been making for years.  I'm going to have to make this version for the kids, hubby, & I on St. Patrick's Day.
 Prep Time: 10 min. | Total Time: 45 min. | Makes: 4 servings, about 1-1/4 cups each.

What You Need
1 lb. lean ground beef
1 cup frozen mixed vegetables (peas, carrots, corn)
1 cup beef gravy
1 pkg. (24 oz.) BOB EVANS® Original Mashed Potatoes
1/4 lb. (4 oz.) VELVEETA Pasteurized Prepared Cheese Product, cut into 1/2-inch cubes
Make It
Heat oven to 375°F.
Brown meat in heavy medium ovenproof skillet; drain. Return meat to skillet; stir in frozen vegetables and gravy.
Combine potatoes and VELVEETA; spread over meat mixture.
Bake 20 to 25 min. or until heated through and lightly browned.

Serving Suggestion:
Serve with a mixed green salad and your favorite fresh fruit to round out the meal.
Substitute:
Substitute 1 pkg. (16 oz.) BOB EVANS® Original Roll Sausage for the ground beef.
How to Ovenproof a Skillet:
Wrap skillet handle with several layers of foil before using as directed.
