Step 1:
Saute (3/4 cup chopped celery, 1 cup chopped onion, 3/4 chopped green pepper in 1/4 olive oil)
Add 1 lb. ground beef and 1 lb. ground pork and cook until redness is gone.
Season with 1&1/2 tsp salt and 1/2 tsp pepper.
Step 2:
Cook 12 oz package of wide noodles according to package directions, then drain.
Step 3: Add to drained noodles 1/2 cup margarine, 1 4oz can mushrooms, 2 cans of tomato soup, and meat mixture from Step 1. Mix well & pour into large casserole dish. Sprinkle with Parmesan Cheese. Bake at 400 degrees for 75 minutes. Makes 12 servings.
So what inspired me to post Grandma's recipe? I was over at my deceased aunt's house the other day, finally collecting some crystal and other family heirloom pieces that she'd left me. I'd put off packing them up and bringing them home for quite some time because my Uncle was still living in the home and let's face it, my house is not a fragile crystal & heirlooms kind of place right now. However, my uncle has now been moved to a smaller place with a bit of assistance and their home is in the process of being sold.
Finding a couple of the pieces was easy, for example it's hard not to notice a leopard print French Chair. However, her very detailed list proved tricky when it came to smaller items and I felt like I was on a scavenger hunt by the end of my time there. Perhaps a treasure hunt ... because I left with a small wooden recipe box not on the list. It had originally belonged to my Uncle George and in it was some family favorites I hadn't had in years. Among the faded recipes was my Grandma Mary's favorite comfort dish, her Mezzetti. It's a simple recipe, and probably a million people have it but one that one will always stick in my mind (and likely my hips) as 100% hers. I couldn't help but think that this recipe had been boxed up for far too long.
